Vanilla Malted Marshmallow Ice Cream

September 6, 2016

Creamy vanilla ice cream with marshmallow fluff.

Vanilla Malted Marshmallow Ice Cream //

I will admit it NOW…I have been in the biggest bad mood that I think I have ever been in. We were robbed of our summer by two weeks. Our school district moved back school to start earlier than last year and the year prior.  I want to scream every morning that the alarm clock has buzzed for the past three weeks.

So for now I will stop whining and crying and I will relive summer for the few moments we have left with this Vanilla Malted Marshmallow Ice Cream.

Yosemite in the summer.

Summer for our family was eventful and beautiful all at once. We visited Yosemite and Mammoth and enjoyed it in all its beauty. We lost my beloved dog Lulu and my Grandfather. It brought my little family close together as these losses were painful. We focused on fun, beach days, and s’mores at sunset.

Crystal Cove State Park Summer Sunset

It was a joy having my kids’ home. Life seems to be bit easier (in some ways) the older they get as we get to enjoy more of the great outdoors without worrying about racing home for nap time. So yes you can say I am a bit depressed about it. I know it will get easier, but for now I will add a scoop of this Vanilla Malted Marshmallow Ice Cream in a large glass and top with root beer or maybe adult root beer (wink).

Make this Labor Day Weekend and we guarantee it will make summer last a little bit LONGER….

Watermelon Salsa

June 30, 2015

Watermelon Salsa - a simple, yet flavorful appetizer for your summer festivities! (recipe on simplyhappenstance.com)Watermelon Salsa //

There’s nothing better than a quick and simple homemade salsa! The flavors are robust and so fresh with a medley of vegetables, cilantro, and…. WATERMELON (the secret ingredient that has made this my new summertime favorite)!

Watermelon Salsa - a summertime favorite (recipe via simplyhappenstance.com)-23

This Watermelon Salsa is delicious served as an appetizer with some salty tortilla chips … or it can be used as a fresh topping on poultry or fish. (I even love eating it completely plain — straight out of the bowl with a spoon!) You can even add a heaping spoonful into the center of a sliced avocado and eat it for lunch. (YUM!)

The salsa will remind you of your favorite pico de gallo, only better! The sweet bites of watermelon… combined with chopped bell peppers, jalapeño, red onion, and cilantro balance the amazing flavors present in the dish!

Not only is it clean and healthy… it’s pretty to look at, too! Don’t you think?

This Watermelon Salsa would taste fabulous with roasted corn, black beans, chunks of fresh avocado, or sliced cherry tomatoes thrown in the mix. (I love a recipe that’s easy to customize according to what you have on hand!) It’s the perfect appetizer to bring to an upcoming Fourth of July Party or summertime soiree! Enjoy, friends!

Summer Nails

June 2, 2015

Summer is almost here! What are some of your favorite summer nail colors?

:: Summer Nails ::

For those of you who really know me, know that I have a nail polish addition. Between kids, schedules, life, I hardly make it a priority to get my nails and toes done.  Instead, most often than not, I enjoy doing them at home. I am super picky in regards to polish color, brands, and most of all variety.  I am a complete Gemini that loves pretty summer nails. Here are some of my favorite colors and products that I use to create a good at home summer manicure and pedicure.
