Hello, friends… we hope you’re all enjoying the fall season! Nicole and I have been staying busy with our little ones. We love having spare time to share our favorite recipes here on Simply! We also are super fortunate to be contributors over at the fabulous, Simple As That Blog! We recently shared an irresistible recipe for an APPLE PIE BREAKFAST BOWL. This dish is a new favorite… and we hope it becomes one of yours, too! 

Apple Pie Breakfast Bowl - a thick vanilla chia seed pudding topped with fall favorites!

The base of this bowl is a rich, creamy vanilla chia seed pudding. Greek yogurt, almond milk, pure maple syrup, a touch of vanilla, and loads of healthy chia seeds create the thick, slightly-sweet mixture. Sliced crisp apples, crunchy granola, dried cranberries, a dash of cinnamon, and a sprinkling of brown sugar top the pudding, making it the tastiest fall breakfast that your whole family will love! Happy Mother’s Day to all of our friends, family, and readers! Do you have something special planned? So far, all I want to do is relax. April was a busy month….speaking of which, it was someone special’s birthday!  Unfortunately, she slipped under the radar; it was Sara’s birthday! She is one amazing mama and friend.  She keeps her 4 kiddos going while doing the BEST to be patient, and is always above all KIND.  If we lived closer together I would make her this Pineapple Angel Food Cake.  It’s a WAY……oldie but one of the best goodies that I have saved in my Recipe Organization.

Homemade Vanilla Almond Milk

Mmmm! Creamy cold, almond milk! Do you drink it at your house? If not… it’s definitely worth a taste! Even better, try making it from scratch! The task always seemed daunting, in my opinion… which is why I never made it in the past. However, we go through cartons and cartons of almond milk each week… so I thought it was worth a try to make a batch of it homemade. Everything is better fresh, right?!!

About five years ago… maybe even longer, we stopped buying traditional dairy milk in our house. We started using almond milk in its place {since everyone is lactose intolerant in our family}. When my youngest little guy, Finn, stopped nursing at 14 months old, I started giving him almond milk, as well. Did you know that one serving of almond milk has 50% more calcium than regular milk? Amazing! Well, my little guy is now three… and still LOVES his daily cups of almond milk!

The key to making this smooth, creamy milk is soaking the raw almonds in water! Simply place the almonds in a bowl, and cover with about an inch of water. {They will plump as they absorb water.} Let stand overnight, or up to 2 days. 

Homemade Vanilla Almond Milk

Once your almonds have been adequately soaked, make sure you rinse them with fresh water, and drain, so they are ready to use. Put your almonds into a blender with 3.5 cups of water {less water, will equal a stronger flavor, overall}.

Stay calm, stay focused, now repeat, and enjoy.  That is the mantra I am trying to remember during the hustle and bustle.  We are in the thick of it my friends, the lovely holiday season.  We wait for this time all year long and when it comes it seems go by with a blink of an eye.  So here is a small remedy keep it simple, and I am doing so by making Hummingbird Bread.  Sounds fancy but oh so easy.  This year instead of handing out a million cookies, I am making mini breads for my neighbors.  Don’t get me wrong I love baking cookies and will do so, but I want to free up some of my time by creating something that can be enjoyed now and not later when everyone else is stuffed to the brim with sweets.

This week is the kick-off to all of our dessert consumption from now until New Year’s Eve.  Well, for me it usually goes beyond that, but I try! I have said it once, twice, three times “I LIKE PUMPKIN!” Too much, but lucky for me it coordinates well with this upcoming holiday. These Pumpkin Dessert Squares remind me of the homey smell of my Grandma Joan’s kitchen on Thanksgiving Day.  She always had a pot of mulling spices heated in a mini crock pot. The joyous aroma of nutmeg blended with pecans and pumpkin brings me back to my childhood.  Thankfully, I came across this recipe right after I got married and it has been a family favorite ever since.  What makes these Pumpkin Dessert Squares so special is the main ingredient called Muirhead’s Pecan Pumpkin Putter.  It can be found at Williams Sonoma.

I don’t know about you, but this long weekend allowed for ample time to start thinking away about Thanksgiving and the holidays.  No… it wasn’t just me thinking about them, but my family as well.  “What would you like to bring to Thanksgiving?” Well for starters, my first choice will always lean towards dessert {obviously I have a sweet tooth}. I also like to think of simple recipes that I know will be an easy addition to my traditional dishes {that can be found here and here}.  This Gingerbread Pumpkin Fluff is simple, yummy, and can be either an appetizer or a dessert {whew… a two-fer}! It is a great sweet appetizer for family waiting for the turkey to be done, or a wonderful dessert for those who like pumpkin pie, but maybe aren’t fans of the crust.  This dip is similar to pumpkin pie but with the twist of cream cheese and marshmallow fluff.
