Strawberry Tropical Cocktail

It was a big birthday week for my family last week during our spring break.  To celebrate I made a few of these Strawberry Tropical Cocktails.  The taste of this tropical drink will take you back to your last vacation, or make you think of taking one real soon.

This Strawberry Tropical Cocktail is definitely on the skinny side so you can enjoy one or two.  Sip them over appetizers in the late afternoon, or share them with a couple of girl friends and count down the days until schools out for summer!

Refreshing and light this Strawberry Tropical Cocktail reminds us of summer.

What makes this drink feel like it should have a tiny umbrella in it is the mixture of coconut vodka with the muddled strawberries and pineapple. I have made this Strawberry Tropical Cocktail by either simply muddling the strawberries and pineapple with Stevia at the bottom of a cocktail glass or I have placed the strawberries and pineapple with Stevia in the blender.  Either pureed or with fruit on the bottom, this recipe is easy to make and it will transport you to a quiet moment beach side with a cocktail in hand.  Cheers to celebrating birthdays, counting down until schools out, and to enjoying these cocktails on a sunny day.

Strawberry Tropical Cocktail

Ingredients

  • 1 1/2 cups sparkling water I used lime flavored
  • 3 ounces of Coconut Vodka
  • 1 ounce Cointreau
  • 1 packet of Stevia
  • 4 strawberries sliced
  • 1/8 cup pineapple fresh or frozen
  • a splash of orange juice

Instructions

  • Divide the strawberries and the pineapple and place in two cocktail glasses.
  • Add half a package of stevia into each of the glasses.
  • Muddle the fruit and Stevia with a back of a spoon.
  • In a cocktail shaker add the Coconut Vodka, Cointreau, and sparkling water.
  • Shake until mixed but be careful to shake too hard as the sparkling water is carbonated.
  • Pour the mixture into the two glasses.
  • Top each glass with a splash of orange juice and serve with ice.
  • Serve and sip cold

I am so excited to officially say “cheers” to summer with this Berry Tequila Sparkler. If you haven’t caught on yet, while the rest of the country has been out on summer break for weeks, we just officially started today.  So why not celebrate with a bubbly drink mixed with tequila, champagne and Cran-Lemonade. Refreshing and delicious, this patriotic Berry Tequila Sparkler is the prefect bubbly drink for your July fourth festivities.

This year we will be celebrating here in our little community.  We are participating in an Independence Day Parade in the morning, and viewing fantastic fireworks in the evening.  In between we will enjoy some barbeque and a few dips that will go perfectly with this Berry Tequila Sparkler. It’s Margarita Monday, better yet it’s Cinco de Mayo! Let’s shake it up a little with a Skinny Pomegranate Margarita that is sure to make you do a little cha cha after your first sip! Hey, did I mention I LOVE margaritas? If you don’t know that already, it is my favorite adult beverage.  I love that they are the perfect combos of salt and sweet, and I love them fresh….no sweet and sour mix for this girl.

Green Berry Smoothie

Green Berry Smoothie

It’s a New Year can you believe it?  I am thinking positive by starting my day positive and healthy with a Green Berry Smoothie.  Yes, as you can tell Sara and I love smoothies.  Did I mention I worked at Jamba Juice when I was a freshman in college, so yes I am a smoothie dork? I love the way they make me feel in the morning.  I need what ever additional energy I can get, because the whole coffee thing doesn’t get things cracking around here.

I know I am not alone in this whole “feeling good” department and it is something we are always striving to find.  Every year I do make a few resolutions or vows of some simple life changes.  I do have to say that we eat pretty healthy around here when we can, but one of the life changes I would like to incorporate in our life style is adding some gluten free meals into our diet.  This Green Berry Smoothie is gluten free recipe and it is packed with protein, fruits, and vegetables.  But what I am HOPING {it’s my word this year} is to add it more into our kids diet.  With Mason being on the Autism Spectrum, his diagnosis has yet to prove it’s results in a gluten free lifestyle as he is very high functioning, but I think that it can improve his attention span and his energy level in a positive way.  As for myself, we haven’t seen much winter here and there is always the beach and pool that us mamas have to attend to with the kids. I am feeling like it is a Grapefruit Margarita kind of a Monday! There are two reasons to make these refreshing margaritas.  Number 1 it is Sara’s birthday today, so we must of course cheers to that! Happy birthday sweet friend Simply could not happen without you! Number 2, Ay ya ya!, it’s Cinco de Mayo this weekend.
