Sara and I are so very excited to be Blogger Ambassadors for Walkers Shortbread!  You know your favorite plaid cookie tin that you have been enjoying every holiday since you were a kid?  We were asked to come up with  recipes using their delightful cookies. {A thrill for us, as these classic cookies are made from only four pure ingredients… and are GMO, vegetarian, and preservative free.} The family owned company still makes all of their traditional cakes and cookies in the same secluded village in Scotland that they have been running since 1898.  We LOVE that! What’s even more exciting, Walkers is sharing the love of their cookies with our readers for a limited time {until January 31st, 2014}, with this discount code on their site SHMINI2014.

I decided to create this Raspberry Shortbread Ice Cream recipe using the Walkers Mini Shortbread Fingers.  I know what you are thinking! Ice cream in February? It’s been hot in Southern California. It feels like July in January, and believe me… we could use some rain! With this crazy summer like weather, it’s the perfect time to enjoy a scoop of Raspberry Shortbread Ice Cream!

Have you ever had the corn chowder from Mimi’s Cafe? That soup was my inspiration behind this quick, easy, and flavorful autumn meal! {I actually haven’t been there in years… but I have fond memories of that warm, comforting dish!} This recipe is extremely easy using only a few ingredients. It can be made vegetarian, effortlessly, by omitting the bacon. It can also be made healthier by using milk in place of half & half, or heavy cream…. it’s your choice! I decided not to skimp on the creaminess… so I went with the heavy cream. {It was just one of those days!} The corn chowder turned out rich, creamy, and delicious friends! Cupcakes have to be one of my favorite items to bake! I love them because I don’t feel as guilty eating one, as I do making a cake. Cupcakes always seem to put a smile on my family’s face.  Though I love the actual cake portion of the cupcake, I adore the frosting the most!  It is something I have enjoyed since a child.  My favorite is a light whipped cream frosting, but a good butter cream frosting {that is not too rich}, is a wonderful topping on any cupcake!  My favorite butter cream frosting is by Magnolia Bakery.  I have made it a million times, and have added a few items and recreated it into other butter cream flavors.  Yes I know… very vanilla, but sometimes simple is best!   [Read more…]

Baked Oatmeal

:: Baked Oatmeal ::

In California we are synonymous for “May gray” and “June gloom.”  Since it has been a few mornings of gloom in this lovely month of June, I decided to make some Baked Oatmeal.  It is one of my favorite breakfast recipes.  It is homey and filling and reminds me of the Fall.  I know, I know, its not fall, but sometimes I like to pretend it is.The aroma of cinnamon and applesauce will make your house smell like heaven. Though it sounds rich, it definitely is a light recipe.  What I love about this wonderful Baked Oatmeal is that it can be made the night before.  You can prepare all of the ingredients and then just pop into the oven.  Simple as that, and it makes wonderful left overs.
