Strawberry Mango Cream Popsicles

Easy to make Strawberry Mango Cream Popsicles. Tasty on a hot summer day.

Summer is nearly over for us…and the dreading S starts in a few weeks. Yes, Sara and I have been a little MIA from our usual posts for Simply Happenstance. We love our little blog, but both Sara and I have been enjoying our short summer with our kiddos, and lets just say it has simply been going by way toooo fast!

In between beach days and pool time, I blended together this easy and refreshing recipe for Strawberry Mango Cream Popsicles. They are a cinch to make on a hot summer day, but even better enjoyed outside in the nice summer breeze.

Strawberry Mango Cream Popsicles

Ingredients

  • 1 can sweetened condensed milk
  • 1 cup heavy cream
  • 1 cup strawberries
  • 1/4 cup non-fat Greek Yogurt
  • 1 cup frozen mango
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  • Dump all ingredients into a blender and blend until smooth.
  • Pour the mixture into six to eight popsicle molds.
  • Place in the freezer for 4-8 hours.

Let’s squeeze a little more summer time fun in with this S’mores Malt! My kids are big fans of Ruby’s. Recently we had been walking around The Irvine Spectrum {one of our favorite places to go} when we were given a sample of their new S’mores Shake.  Mason begged to go to Ruby’s!  We tried the shake and I thought it was great, but Mason {my picky eater} said, “Let’s make these at home minus the coffee”… so, here is what we came up with {and by the way… I don’t think there was coffee in them in the first place}!

Happy birthday to you, happy birthday to you, happy birthday dear Sara, happy birthday to you!!! Oh my friends, you don’t know how much I appreciate my co-author and dear friend Sara! Today is her birthday, and we are going to celebrate with one of her favorite recipes, Tres Leches Cupcakes.  Honestly, I don’t know what I would do without my partner in crime.  She balances our Simply Happenstance in ways you don’t see.  We created Simply as a place to share our favorite things {food+family+lovelies}. It has grown because of our lovely readers and it keeps chugging away because of our partnership.  I am so very grateful for Sara.  I hope today turns out to be a relaxing and special with family.
