It’s so funny with the New Year, one instantly feels the need to refresh, tweak a few things around, and try a little harder… for instance with healthier eating. Am I right? I know for me… even without compiling a bunch of resolutions, I ALWAYS have the urge to clean up my act in the eating department, come January! I think I’ve seriously tried it all, you guys. I’ve done an elimination diet, become completely vegan, vegetarian, gluten-free… I’ve even done two back-to-back rounds of the Whole30! Yikes! Sort of crazy…. I know!

Well, this year is really no different. I started off thinking I may attempt 100 days of Real Food with a dear friend of mine, but I’ve already thrown in the towel. Before you feel sorry for my lack of commitment, please know that I don’t plan on eating ding dongs all day {do they still make those?}. Instead, I am just going to do my best. That.Is.All. After all, I think I know what to do at this point… and I’m sort of over following guidelines.

So, with that being said… I picked up this lovely Juice/Smoothie recipe book from Barnes & Noble over the holidays. {It was in the bargain section, which made me like it even more!} It’s a really pretty book… I highly recommend it for the pictures and for recipe inspiration!

Well, it’s started! The Christmas Season is officially underway! Just this weekend, my sweet girl sang in our small town light parade with her school choir! Nothing puts you in the Christmas spirit quite like a parade filled with exuberant, marching, glowing kids! {Haha!}

Now that it’s truly feeling like Christmas is near, I have started planning what cookies and bars to make for neighbors, family and friends, to celebrate the joyous upcoming holiday. I know one thing for sure! These Chocolate Peppermint Crinkle Cookies, will most definitely, be on my list!

Earlier this week, while doing a little grocery shopping, I picked up a bag of these little gems {Hershey’s Peppermint Kisses}! You guys! I hadn’t eaten one before! I wouldn’t consider myself a peppermint lover {although I don’t mind a little peppermint creamer added to my coffee this time of year}… well, let’s just say that I had to go out and buy bag *number two* before making these cookies! Let’s talk about these chocolate bars! I’ve been trying to cut back on processed sugars over the past year {ok… several years!} It’s not always easy, since I’m the busy mama of four, have a crazy love of baking, and have a total sweet tooth! These days, I try to sweeten the treats I make using raw honey, when I can. I feel so great when I’m able to offer my kids a wholesome, homemade treat using fine, simple ingredients. These Chocolate Almond Oat Bars are just that.

I admit it; I get side tracked when it comes to meal planning.  My goal this school year is to use my slow cooker more often and make simple meals, such as these amazing Barbecue Chicken Sandwiches.  It became an instant favorite of mine, and what’s best of all… it makes enough for leftover’s depending on the size of your family.  Of course if all else fails, you can double the ingredients for this Barbecue Chicken and save some for later. Summer fruit is truly my favorite! It’s hard to beat the taste of ripe peaches and sweet blueberries — nature’s candy! This simple dessert is a delicious way to incorporate seasonal fruit. The trifle comes together easily… in a few steps, and the result is not only delectable, but beautiful as well! The best part is that it isn’t a heavy dessert. Oh no! It quite the opposite — completely light and airy!

Since I’m still getting settled in our new house, I’ve been creating dishes that are semi-homemade  {I still haven’t unpacked all of my kitchen boxes — must get on that}! Hey friends! Let’s talk breakfast… I get stuck in a rut, all too often. How about you? I typically start my day with a protein shake. {Don’t get me wrong… I actually LOVE my morning shake, but sometimes I want a little change!} Since I have a moderate allergy to eggs, that eliminates the morning scramble.

Yesterday morning, Mr. Amazing and I switched it up by making this simple, yet delicious, Smoothie Bowl! It’s honestly the easiest and most versatile breakfast {or mid-day snack}!
