Energizing Smoothie Bowl

August 19, 2014

energizing smoothie bowl:: Energizing Smoothie Bowl ::

Hey friends! Let’s talk breakfast… I get stuck in a rut, all too often. How about you? I typically start my day with a protein shake. {Don’t get me wrong… I actually LOVE my morning shake, but sometimes I want a little change!} Since I have a moderate allergy to eggs, that eliminates the morning scramble.

Yesterday morning, Mr. Amazing and I switched it up by making this simple, yet delicious, Smoothie Bowl! It’s honestly the easiest and most versatile breakfast {or mid-day snack}! Just whip up your favorite smoothie… making it extra thick and creamy, and add a variety of your favorite healthy toppings!

To create your own combination, use your favorite greens or other vegetables {kale, spinach, cucumber, etc.}, frozen fruit, protein {nut butters, chia seeds, or protein powder}, healthy fats {avocado, coconut oil, hemp seeds, chia seeds, or nut butters}, super foods {cinnamon, coconut, matcha tea powders, oats…}, liquid {cashew or almond milk, coconut milk, or water}, and ice. You can also add in a natural sweetener such as stevia or raw honey, if you desire!

Other Topping Ideas:

  • natural nut butters {peanut, almond, etc.}
  • cacao nibs
  • raspberries
  • blackberries
  • grapes
  • kiwi
  • goji berries
  • pomegranate seeds
  • pumpkin seeds

Serves: 2

This Energizing Smoothie Bowl starts with a thick, creamy base... and is topped with a variety of healthful, protein packed, super foods!
Ingredients
  • SMOOTHIE:
  • 1½ cups frozen fruit {I used an organic mix from Traders Joe's of bananas, strawberries, pineapple, and mango}
  • 1 ripe banana
  • 1 cup raw spinach {optional}
  • 2 tablespoons nut butter {natural almond or peanut butter}
  • ¾-1 cup liquid {almond milk, cashew milk, coconut milk, water...} -- depending on desired consistency
  • 1 tablespoon chia seeds
  • ice {to thicken}
  • {If you add a scoop of your favorite protein powder, add in some extra liquid}
  • *TOPPINGS:
  • fresh, sliced fruit {strawberries, blueberries, banana}
  • granola
  • unsweetened coconut
  • slivered almonds
  • sprinkling of chia seeds
  • *With the exception of the fresh fruit, the other toppings are great to get in the dry bin section of your local health food store.
Instructions
  1. In a blender, mix frozen fruit, banana, spinach {optional}, nut butter, liquid, chia seeds, and ice. Blend until thick and creamy. Add in more ice and/or liquid to obtain your desired consistency {remember... this is going into a bowl to eat with a spoon}! Pour into serving dish and top with your favorite toppings! Enjoy!
