Crock Pot Barbecue Chicken made simple. Perfect weeknight meal.:: Barbecue Chicken Sandwiches ::

I admit it; I get side tracked when it comes to meal planning.  My goal this school year is to use my slow cooker more often and make simple meals, such as these amazing Barbecue Chicken Sandwiches.  It became an instant favorite of mine, and what’s best of all… it makes enough for leftover’s depending on the size of your family.  Of course if all else fails, you can double the ingredients for this Barbecue Chicken and save some for later. Dinner is served!

Onions for Easy Crock Pot Barbecue Chicken Sandwiches

Over the summer, one of my friends planned a last minute get together.  I mean, really last minute and what was amazing about this get together was that she had food prepared for both the kids and the Moms. Real simple and easy food, but it all tasted incredible.  She prepared chicken sandwiches that she made with her slow cooker using this tasty Carolina Gold Barbecue sauce.  The chicken came out tender and tangy and I loved everything about it.  So from that moment on, I was on a mission to figure out how to make a simple yet satisfying chicken sandwich using the same barbecue sauce she used to make the chicken. I thought since my backyard is under construction, that I needed to use up the last of the produce from my garden box.  My little onions above took months to grow, and I had to throw in an extra bell pepper…..

Easy Crock Pot Barbecue Chicken Sandwiches

… and this recipe for Barbecue Chicken Sandwiches was created!  They are spicy yet tangy; the perfect combo for a lazy Sunday at home watching Football, or for a busy weeknight after a day of the runaround.  Yum!

Barbecue Chicken Sandwiches

Ingredients

  • 1 1/2 lb. chicken breasts
  • 1 cup Carolina Gold Barbecue Sauce {can be purchased at Trader Joe's}
  • 1/2 bottle of beer {about 1 cup}
  • 1 onion diced
  • 2 Bell Peppers diced
  • Hawaiian Mini Rolls
  • Sharp Cheddar Cheese for topping
  • Avocado
  • Brocoli Slaw

Instructions

  • Turn your slow cooker onto low.
  • Spray with non stick cooking spray.
  • Place the chicken at the bottom of the slow cooker.
  • Sprinkle the diced onion and bell peppers.
  • Mix the barbecue sauce and beer together in a small bowl.
  • Then pour the barbecue sauce and beer over the mixture.
  • Cover and cook for 6-8 hours.
  • Place the Barbecue Chicken on the Hawaiian Rolls and top with Brocoli Slaw, Cheese, and Avocado.

Notes

The beer helps bring out the flavor of the barbecue sauce but is not necessary if you need to eliminate this ingredient.
