Easy Craft Easter Eggs perfect for Spring and a fun activity with the kids.

Welcome to the first day of spring! Sara and I are excited to be contributing over at Simple As That today with these fun Craft Easter Eggs.  They are perfect for spring decorating around the house and they make for a fun craft for the kids. These Craft Easter Eggs are simple to make and what makes them oh so fabulous is that they don’t go bad! They are made of plastic, they don’t open, and they are dye able!

I have our Craft Easter Eggs displayed in a large clear vase.  You can pick up these craft eggs at Michael’s. They work just like dying real eggs but with half the mess.  No more broken eggs here, and what’s even better, is that the kids helped and can display their artful eggs for the Easter holiday.

The Perfect Dutch Baby

I may need an intervention! I recently made my first ever Dutch Baby {which is sometimes called a German Pancake, a Bismarck, or a Dutch Puff}.  I’ve since made a few more batches, using my new favorite cast iron skillet. I may be addicted, friends! I love the simplicity of the ingredients, and how you can easily change the taste by the toppings you choose.  I also love the flavor and texture! It reminds me of a mix between a pancake, crepe, and an omelet. {Is that strange?! I promise it’s utterly delicious!} The edges end up golden brown in color, and slightly chewy/crispy {sort of omelet-like}, while the inside of the Dutch Baby becomes an almost custard-like consistency. It’s hard to put into words — but trust me, it’s crazy good! 

The first Dutch Baby I made, I topped with a sprinkling of powdered sugar and a drizzle of raw honey. I dressed the second batch with a dusting of powdered sugar, and fresh blueberries {pictured}. The third batch I made, I simply dipped each bite into a bath of  pure maple syrup! I’ve yet to try a hint of fresh squeezed lemon and butter, but I’ve been told it’s a favorite among many! It’s officially summer! These Red, White, and Blueberry Cupcakes scream 4th of July! With our easy Whipped Cream Frosting, blueberries, shortbread, and raspberry topping, these patriotic treats are a great way to end your summer barbecues!  It’s crazy to think how quickly this year has flown by.  What is even crazier, is as I blog this post, we aren’t even out of school yet. Tomorrow is the last day of 1st grade for my son, and Wednesday is the last of preschool for Madeline.  I actually think at this moment, I should be doing a post about a celebratory drink that is being enjoyed over a few little tears.  I can’t believe my baby will be in kindergarten next year, and my oldest in second grade.  Though they are almost taller than me, I still think of them as little babies.  Okay, enough about that…..let’s get ready to rock 4th of July next week, with these Red White and Blueberry Cupcakes! Happy birthday to you, happy birthday to you, happy birthday dear Sara, happy birthday to you!!! Oh my friends, you don’t know how much I appreciate my co-author and dear friend Sara! Today is her birthday, and we are going to celebrate with one of her favorite recipes, Tres Leches Cupcakes.  Honestly, I don’t know what I would do without my partner in crime.  She balances our Simply Happenstance in ways you don’t see.  We created Simply as a place to share our favorite things {food+family+lovelies}. It has grown because of our lovely readers and it keeps chugging away because of our partnership.  I am so very grateful for Sara.  I hope today turns out to be a relaxing and special with family. Hummingbird Bread

Stay calm, stay focused, now repeat, and enjoy.  That is the mantra I am trying to remember during the hustle and bustle.  We are in the thick of it my friends, the lovely holiday season.  We wait for this time all year long and when it comes it seems go by with a blink of an eye.  So here is a small remedy keep it simple, and I am doing so by making Hummingbird Bread.  Sounds fancy but oh so easy.  This year instead of handing out a million cookies, I am making mini breads for my neighbors.  Don’t get me wrong I love baking cookies and will do so, but I want to free up some of my time by creating something that can be enjoyed now and not later when everyone else is stuffed to the brim with sweets.

This week is the kick-off to all of our dessert consumption from now until New Year’s Eve.  Well, for me it usually goes beyond that, but I try! I have said it once, twice, three times “I LIKE PUMPKIN!” Too much, but lucky for me it coordinates well with this upcoming holiday. These Pumpkin Dessert Squares remind me of the homey smell of my Grandma Joan’s kitchen on Thanksgiving Day.  She always had a pot of mulling spices heated in a mini crock pot. The joyous aroma of nutmeg blended with pecans and pumpkin brings me back to my childhood.  Thankfully, I came across this recipe right after I got married and it has been a family favorite ever since.  What makes these Pumpkin Dessert Squares so special is the main ingredient called Muirhead’s Pecan Pumpkin Putter.  It can be found at Williams Sonoma.
