Welcome to Memorial Weekend! Can you believe it is here already? We are excited to share some of our favorite summer finds in this edition of Weekend Lovelies. Do you have any fun plans this weekend? Maybe you have a barbeque to attend? This week we shared a couple easy and pleasing summer recipes. Need an easy dessert? Try our Chocolate S’mores Treat. Whip up a tasty appetizer with this recipe for Pan-Fried Onion Dip. Either way keep it simple and enjoy the start of summer time fun. Fingers crossed that it may be warm and sunny. Cheers!

  1. Table In A Bag is a must for the summer. We have used ours a ton over the years. Perfect for picnics and concerts in the park.  
  2. Everyone needs a good hat especially to keep the sun off of your face. Loving this visor.  A must buy for summer walks.

I will run I will take an additional yoga class all to eat this Pan-Fried Onion Dip!  I promise you this will be the BEST onion dip you will ever make. It will have your doing back flips!  My friend Erica brought this amazing dip to a girl’s night I had a few years ago.  Just an excuse to get together with a couple of girl friends to watch a little Real Housewives of Orange County.  Yes, I know mindless television, but it allowed for us to catch up and hang out.  A couple of fun drinks plus some appetizers, made this for the perfect girls night in.  [Read more…]

Gluten Free Banana Pancakes

It’s Sunday morning and I am not fully awake, but my kids are! A foggy slow morning calls for Banana Pancakes.  A weekend favorite, but today I have decided to make a small change to this breakfast recipe.  Anything for my special boy, pancakes it is, but I am switching it up a bit and giving this picky eater a chance to try Gluten Free Banana Pancakes.

Explaining less and helping out with the meal can sway any picky eater from noticing a small adjustment.  Believe me sometimes I think this kid has eyes in the back of his head and a memory of an elephant {well okay that part is my fault}.  I did have to trick him a little bit as my flour sits in a canister on the counter top.  I measured out the Bob’s Red Mill Biscuit and Baking Mix prior to having Mason assist me with the pancake making.  You gotta do what you gotta do.  [Read more…]

I am ADDICTED to Costco’s Granola!!!  Have you had it? Shane had to have a semi-intervention with me in regards to their granola, so I needed to whip up a batch of homemade granola stat!  This Walnut Granola Crunch Recipe is healthy, delicious, and it makes your home smell incredible while it’s baking.  The smell of the sweet honey, oats, and walnuts create the perfect fall aroma.  This is exactly why I love granola and oatmeal so much.  It’s healthy, filling, and it can be versatile.  It is a fall favorite, but with a few simple switches, this granola can be enjoyed year around. Panzanella Salad

It just doesn’t get much easier {or tastier}, than this healthy summer salad! Panzanella Salad is my absolute FAVORITE dish to serve to friends… whether I’m taking it to their house, or hosting a summer playdate in my own home. It’s also the perfect meal to bring for a picnic lunch or concert in the park! 

There is some chopping of fresh veggies involved, the making of a simple homemade vinaigrette dressing, and a little toasting of french bread in a frying pan with a drizzle of olive oil… but the steps are super basic {you could even get the kids to help you toss it all together}! In under thirty minutes… you will have a scrumptious, fresh, tangy, and crisp bread salad to enjoy!

This recipe has always gotten rave reviews… but the best part is that you can easily customize it to your own taste! For example… love a greek salad? Just add in some chopped olives and feta cheese! For my husby, I omitted the red onion and added avocado slices. Any way that you do it… it comes out perfectly fresh and delectable! The combination of flavors is seriously… mouthwatering! Egg-in-a-Hole

My kids and I have a secret obsession….. it’s watching the Food Network’s cooking shows! We don’t turn the television on during the week {because we’ve learned we never get homework done otherwise}, but when the weekend strikes… the kids and I do love a little downtime watching a few of our favorites together…. especially the Pioneer Woman, the Barefoot Contessa, and Trisha’s Southern Kitchen {or Ree, Ina & Trisha… as we call them around here}! This recipe is one that I recently tried out from Ree {the Pioneer Woman}. I decided to be a loving wife and make Husby a little breakfast upon coming home from a 48-hour shift at the fire station. I am actually allergic to eggs… so I was not able to sample the dish, but I will say that it smelled heavenly… and Husby did devour two pieces and said he thinks it’s even better than FRENCH TOAST!!
