Hello, friends… we hope you’re all enjoying the fall season! Nicole and I have been staying busy with our little ones. We love having spare time to share our favorite recipes here on Simply! We also are super fortunate to be contributors over at the fabulous, Simple As That Blog! We recently shared an irresistible recipe for an APPLE PIE BREAKFAST BOWL. This dish is a new favorite… and we hope it becomes one of yours, too! 

Apple Pie Breakfast Bowl - a thick vanilla chia seed pudding topped with fall favorites!

The base of this bowl is a rich, creamy vanilla chia seed pudding. Greek yogurt, almond milk, pure maple syrup, a touch of vanilla, and loads of healthy chia seeds create the thick, slightly-sweet mixture. Sliced crisp apples, crunchy granola, dried cranberries, a dash of cinnamon, and a sprinkling of brown sugar top the pudding, making it the tastiest fall breakfast that your whole family will love! Get ready for Fall with this Skillet Spiced Apple Crumble:: Skillet Spiced Apple Crumble ::

We love fall!  As soon as the temperature drops a couple degrees, I make this light and simple Skillet Spiced Apple Crumble. 

Over the weekend my husband and I celebrated our 11th wedding anniversary.  We spent the day going back to the town and winery that we got married at.  It was a beautiful day out in Temecula.  The weather was cooler and there was a slight breeze, a relief from the heat that we have had here in Southern California.  I know that most people don’t think that we have much of a fall, but we do have a few slight changes when this season arrives. I took full advantage of this fall feeling and I made this special Skillet Spiced Apple Crumble for my hubby.  It’s one of his favorite desserts. It was our anniversary after all {wink}! I don’t know about you, but this long weekend allowed for ample time to start thinking away about Thanksgiving and the holidays.  No… it wasn’t just me thinking about them, but my family as well.  “What would you like to bring to Thanksgiving?” Well for starters, my first choice will always lean towards dessert {obviously I have a sweet tooth}. I also like to think of simple recipes that I know will be an easy addition to my traditional dishes {that can be found here and here}.  This Gingerbread Pumpkin Fluff is simple, yummy, and can be either an appetizer or a dessert {whew… a two-fer}! It is a great sweet appetizer for family waiting for the turkey to be done, or a wonderful dessert for those who like pumpkin pie, but maybe aren’t fans of the crust.  This dip is similar to pumpkin pie but with the twist of cream cheese and marshmallow fluff.

Happy weekend, friends! I don’t know about you…. but our weather here in the SoCal mountains is finally starting to resemble FALL! I couldn’t be more excited! A Day with friends in Oak Glen

On Veteran’s Day, one of our dearest family friends

invited us to come along with them for a day spent in Oak Glen, California.

Husby got off of work that morning from a two-day shift.

We pulled together and attempted to quickly tackle the morning routine

while trying to diffuse little arguments between our kids along the way.

It was definitely one of those chaotic mornings where the house was a mess,

the kids were cranky, and each time I turned around,

Mr. Finn was creating more of a disaster!

We left a good hour after we had planned…

I sacrificed a trip to Starbucks {to get a cup of my current addiction}

and we set forth on the road.

Luckily we didn’t run into any traffic, but we did get a bit off track… {to say the least}!

My dear friend, thankfully, gave me a buzz

and I told her the exit we had just taken

{we had finally stopped for that cup of coffee I was craving – smile}.

My directional friend quickly explained that we were headed the wrong way.

We were, in fact, headed up the mountain towards Lake Arrowhead.

After our detour, we finally hit our destination and couldn’t believe how lovely the area was.

There were yaks, deer, and beautiful country homes situated on roomy lots with big Fall trees.

It was peaceful, crisp, and just what we needed … {especially after the crazy morning we had}.

Although we didn’t have time to visit the apple orchards that particular day,

we did have an amazing day spent with some of our closest friends.

We took our kids to the petting zoo,

and walked around the rustic little town.

We couldn’t leave with out indulging in some vanilla roasted nuts, hot dogs, chili,

and some homemade warm apple burritos.

With two fresh apple pies in hand, we said good-bye to charming Oak Glen.

Hopefully we can make this into a Fall family tradition…

but next time will plan on a full day… with apple picking!

{So thankful to have this girl in my life…. my amazing friend Maria and I}
