There’s nothing better than a quick and simple homemade salsa! The flavors are robust and so fresh with a medley of vegetables, cilantro, and…. WATERMELON (the secret ingredient that has made this my new summertime favorite)!

This Watermelon Salsa is delicious served as an appetizer with some salty tortilla chips … or it can be used as a fresh topping on poultry or fish. (I even love eating it completely plain — straight out of the bowl with a spoon!) You can even add a heaping spoonful into the center of a sliced avocado and eat it for lunch. (YUM!)

The salsa will remind you of your favorite pico de gallo, only better! The sweet bites of watermelon… combined with chopped bell peppers, jalapeño, red onion, and cilantro balance the amazing flavors present in the dish!

This Watermelon Salsa would taste fabulous with roasted corn, black beans, chunks of fresh avocado, or sliced cherry tomatoes thrown in the mix. (I love a recipe that’s easy to customize according to what you have on hand!) It’s the perfect appetizer to bring to an upcoming Fourth of July Party or summertime soiree! Enjoy, friends!

Watermelon Salsa

This tasty Watermelon Salsa is filled with healthy, fresh ingredients! It's a simple Fourth of July appetizer or summer potluck dish!

Ingredients

  • 1/2 whole Small Seedless Watermelon Diced
  • 1/2 whole Red Onion Diced
  • 1 whole Red Bell Pepper Seeded and Diced
  • 1 whole Green Bell Pepper Seeded and Diced
  • 1 whole Yellow Bell Pepper Seeded and Diced
  • 2 whole Jalapeños Seeded and Diced
  • 1 whole Bunch Fresh Cilantro Chopped
  • 1-2 whole Limes Juiced
  • 1/2 teaspoon Sea Salt

Instructions

  • Combine all prepared ingredients in a medium-sized mixing bowl. Give it a good stir and chill in the refrigerator until ready to serve. Keeps for one day, so get those chips ready!
  • *Optional ingredients // sliced avocado, sliced cherry tomatoes, black beans, and/or roasted corn.

Notes

Serve fresh salsa with tortilla chips for an appetizer, or scoop into one half of an avocado and eat for lunch! Also delicious as a topping for poultry and fish.

Healthier Spinach Artichoke Dip:: Healthier Spinach Artichoke Dip ::

I’m an appetizer and dessert girl. {In fact, I could almost do away with all other types of meals. Small bites of scrumptious food, paired with some fresh fruit or a salad, is sometimes all that I want!} Trader Joe’s makes a delicious spinach artichoke dip that they sell in their freezer aisle. My husby and I have been hooked on it for a while. We love dipping spicy soy + flaxseed chips or pita wedges into the creamy mixture! Since it’s a favorite light lunch for us, I thought I would try to make my own version of the dip… only healthier {that way I can eat more of it, right?!!}.

It’s the day before the Fourth of July, and you need to make a quick appetizer… this easy Firehouse Salsa is sure to make your holiday spicy and fun!   Who doesn’t love a good restaurant salsa?{Not to mention some salty tortilla chips!}  They are a favorite of mine, but I have to admit I am a salsa snob. Both Sara and I are married to firefighters, and let’s just say they have to know how to cook.  Yes it wasn’t something that they knew before entering the fire department, but it was something that they had to learn.  When my husband was working as a reserve, the fire department he was volunteering for prided themselves on making the BEST salsa in the area and this is their secret recipe…..

I don’t know about you, but this long weekend allowed for ample time to start thinking away about Thanksgiving and the holidays.  No… it wasn’t just me thinking about them, but my family as well.  “What would you like to bring to Thanksgiving?” Well for starters, my first choice will always lean towards dessert {obviously I have a sweet tooth}. I also like to think of simple recipes that I know will be an easy addition to my traditional dishes {that can be found here and here}.  This Gingerbread Pumpkin Fluff is simple, yummy, and can be either an appetizer or a dessert {whew… a two-fer}! It is a great sweet appetizer for family waiting for the turkey to be done, or a wonderful dessert for those who like pumpkin pie, but maybe aren’t fans of the crust.  This dip is similar to pumpkin pie but with the twist of cream cheese and marshmallow fluff.
