Summer is not over on my calendar yet! I still have one more day before the back to school routine starts.  I don’t know about you, but this week has been HOT! That being said, it’s time to cool down with a lovely drink of Watermelon Lemonade.  Mocktail or Cocktail this drink is a must on a warm day.  It’s sweet and tangy and will leave you feeling cool as a cucumber.  I don’t know why I didn’t share it with you earlier in the summer {thanks Erica for the reminder, wink}, but hey… I know you still have time to whip up this easy drink!  The heat doesn’t kick up a notch until September for us here and in Southern California.  With less time for trips to the beach, or a dreamy Hawaiian in the future, this cocktail will make any celebration a reason to say “cheers” to the end of summer!

Watermelon Lemonade

Refreshing yet tangy cocktail or mocktail. This lemonade is a wonderful drink on a hot day!

Ingredients

  • 2 large lemons-quartered
  • 1 handful of mint
  • 1/2 cup brown sugar
  • 1/2 medium watermelon-blended
  • 1 1/2 cups blood orange vodka love, love Skyy Infusions Blood Orange Vodka
  • Ice for serving

Instructions

  • Quarter the two lemons.
  • Squeeze and dump the lemons into the bottom of a pitcher.
  • Add the brown sugar and mint.
  • Mix together and muddle the mint into the lemon mixture.
  • Cut up the half of the watermelon removing from the rind.
  • Place a quarter of the watermelon into a blender and blend until smooth.
  • Continue with the remainder of the watermelon.
  • Using a sieve or strainer, pour the watermelon juice into the pitcher a little at a time.
  • Next pour the optional vodka into the pitcher.
  • Mix together and pour over ice.

Notes

This drink is a wonderful celebration drink. It pairs well with spicy food. With the vodka being optional, this Watermelon Lemonade is a must for your next get together. Cheers!
