So… I’ve been on a serious {carb-overload} toast kick. I can’t seem to shake it. I usually start my day with a healthy, protein-packed smoothie, but lately… all I crave is a warm cup of coffee and a buttery piece of toast. {Yikes!} Perhaps not the healthiest way to start my day {insert frown face}. I’ve noticed within an hour or two, my stomach is already growling. I decided it’s best not to fight my craving, but instead… let it ride out. After all, how long can this toast addiction of mine last?

So, in an effort to make my latest obsession a little more nutritious, I gave Gwyneth Paltrow’s recipe for Avocado Toast a try. It’s from her It’s All Good cookbook – a fave of mine! You guys… how have I not been eating this? Not only did I love it… but so did 3 out of 4 of my kids {success, right?}! It reminded me of my husby’s tasty homemade guacamole on toast! PERFECTION, I tell you!

It’s winter… but I live in Southern California, so it’s not reallllllly winter! I surely can’t relate to those of you shoveling snow and bundling up in your cozy cold-weather gear. Where I live, we’ve had a few days of cooler weather, some rain, and even one day of random snow {can you believe it?}… but for the most part, we’ve had many days in the 70’s. {I’m not complaining, I assure you!}

Despite the warmer weather we’ve had this past week, I do still crave cups of soul-warming food and steaming hot beverages! This Classic Tuscan Soup completely takes care of those seasonal cravings. It’s so funny with the New Year, one instantly feels the need to refresh, tweak a few things around, and try a little harder… for instance with healthier eating. Am I right? I know for me… even without compiling a bunch of resolutions, I ALWAYS have the urge to clean up my act in the eating department, come January! I think I’ve seriously tried it all, you guys. I’ve done an elimination diet, become completely vegan, vegetarian, gluten-free… I’ve even done two back-to-back rounds of the Whole30! Yikes! Sort of crazy…. I know!

Well, this year is really no different. I started off thinking I may attempt 100 days of Real Food with a dear friend of mine, but I’ve already thrown in the towel. Before you feel sorry for my lack of commitment, please know that I don’t plan on eating ding dongs all day {do they still make those?}. Instead, I am just going to do my best. That.Is.All. After all, I think I know what to do at this point… and I’m sort of over following guidelines.

So, with that being said… I picked up this lovely Juice/Smoothie recipe book from Barnes & Noble over the holidays. {It was in the bargain section, which made me like it even more!} It’s a really pretty book… I highly recommend it for the pictures and for recipe inspiration!

Hey friends! Let’s talk breakfast… I get stuck in a rut, all too often. How about you? I typically start my day with a protein shake. {Don’t get me wrong… I actually LOVE my morning shake, but sometimes I want a little change!} Since I have a moderate allergy to eggs, that eliminates the morning scramble.

Yesterday morning, Mr. Amazing and I switched it up by making this simple, yet delicious, Smoothie Bowl! It’s honestly the easiest and most versatile breakfast {or mid-day snack}! I recently sat down and reminisced about my favorite 4th of July celebrations over the years. They were spent at my Aunt Jean’s house in Fullerton. She had the most beautiful Spanish style house, with a big backyard, and dreamy swimming pool. She invited everyone!  Her yard was always packed full of close friends and family. After dark… we would crowd the usually quiet street in front of her house {which was situated on a hill}, and watch the local firework show. 

Looking back, I have the fondest… most cherished memories of the 4th of July because of my sweet Aunt Jean and the wonderful annual gathering she created! The conversation was always delightful, the pool nice and cool, and the food… absolutely scrumptious! Of course, the homemade ice cream {that seemed to take forever to churn by hand}, was always my favorite!

Fresh peach ice cream seemed to be a tradition at her 4th of July celebrations, which is why I decided to make my own version to share with my family! I’m hoping to carry-on the lovely homemade ice cream tradition to celebrate Independence Day this year… and in the many years to come!

Homemade Vanilla Almond Milk

Mmmm! Creamy cold, almond milk! Do you drink it at your house? If not… it’s definitely worth a taste! Even better, try making it from scratch! The task always seemed daunting, in my opinion… which is why I never made it in the past. However, we go through cartons and cartons of almond milk each week… so I thought it was worth a try to make a batch of it homemade. Everything is better fresh, right?!!

About five years ago… maybe even longer, we stopped buying traditional dairy milk in our house. We started using almond milk in its place {since everyone is lactose intolerant in our family}. When my youngest little guy, Finn, stopped nursing at 14 months old, I started giving him almond milk, as well. Did you know that one serving of almond milk has 50% more calcium than regular milk? Amazing! Well, my little guy is now three… and still LOVES his daily cups of almond milk!

The key to making this smooth, creamy milk is soaking the raw almonds in water! Simply place the almonds in a bowl, and cover with about an inch of water. {They will plump as they absorb water.} Let stand overnight, or up to 2 days. 

Homemade Vanilla Almond Milk

Once your almonds have been adequately soaked, make sure you rinse them with fresh water, and drain, so they are ready to use. Put your almonds into a blender with 3.5 cups of water {less water, will equal a stronger flavor, overall}.
