Chocolate Chip Peppermint Cookies

December 17, 2015

These Chocolate Chip Peppermint Cookies are fun and easy way to make a large amount of festive treats. Perfect for cookie exchanges.

Chocolate Chip Peppermint Cookies //

We are just days away from school being out and all of the holiday fun to begin. Like many of you, the last couple weeks leading up to the holiday break are packed full of performances, gift exchanges, and class room parties….not to mention a cookie exchange or two thrown into the mix. For the past few years, I have attended one of my dear friends fun and festive cookie exchanges. Her rules are simple…7-9 dozen of the same cookie. Homemade and in the comments of the Evite, she monitors to make sure we all have a variety of cookies to share. 7-9 dozen cookies you say….crazy right!?, but not so crazy once you have attended one of her parties. Every year she rounds up all of the wrapping (bags, bells, boxes, and tags) so you can create gifts for teachers, neighbors, friends, heck even for the mailman, and sets them out on a large table. Once you do your rounds of picking all of the 7-9 dozen cookies you need, you sit down with a celebratory drink and start wrapping cookies in the prettiest of ways.

It’s a fun way to visit with friends, meet new ones, and find a new favorite cookie or two. This year, like last year, I be bringing these yummy and simple, Chocolate Chip Peppermint Cookies. The recipe calls for a few ingredients, but the kicker is that it makes approximately 112 cookies. The perfect recipe for an exchange as it is only one batch of cookies, and best of all I made mine ahead of time and was able to freeze the dough.

Every year I leave this cookie exchange; happy, festive, and accomplished. Sara and I hope you like this recipe and try it over the next week with your kiddos, as we are sure they will love the sweet combo of peppermint candy and chocolate chips. Let us know what you think?, we hope you bake a batch before company arrives.

Chocolate Chip Peppermint Cookies are an oldie but a goodie. They make almost 9 dozen in one batch.

Vanilla Bean Scones

February 6, 2015

Vanilla Bean Scones {recipe on simplyhappenstance.com}-33Vanilla Bean Scones //

My kids and I love the little Vanilla Bean Scones at Starbucks. Unfortunately, we don’t get them too often, because they tend to run out early in the day. They’re delicious (and clearly we aren’t the only ones who think so)!

Having never made scones before, I decided to search for a ‘copycat’ recipe online. Lucky for me, I came across one that The Pioneer Woman posted some time ago. I wouldn’t describe the recipe as quick and easy, friends… rather, I think it’s a bit labor intensive. (Sort of like the work involved in making homemade sugar cookies, cutting them out, frosting them, etc.) There’s lots of love that goes into creating these little gems, but it makes them absolutely irresistible!

I’m sort of at a loss for words in describing them, but in my (“expert” of all-things-sweet) opinion, they’re the perfect flakey scone texture! The glaze compliments the slightly sweet biscuit, sealing in the moisture. However, the star of the scone is definitely the vanilla bean! Did you know that there are usually 25,000 tiny vanilla seeds in one scraped vanilla bean pod? Amazing! Well, all of those mini flecks add the most intense flavor!  [Read more…]

Simple Sangria Recipe

August 26, 2014

This Simple Sangria Recipe really is that simple. Perfect for end of summer parties and great for Game Day!:: Simple Sangria Recipe ::

This Simple Sangria Recipe has a fun story.  In September I will be celebrating my 11th wedding anniversary! My hubby and I got married at a winery.  We both love and enjoy wine. I learned how to make this Simple Sangria Recipe after we had a tasting at the winery in which we wed.  They had a band playing on a warm Sunday afternoon and large vats of Sangria on hand for those customers tasting wine.  It was delicious and it seemed fairly easy to make from what the wine employees had said. {Mind you I wrote down what I thought went in this Sangria on a napkin}.  A little of this and a little of that and a bunch of fruit that sits over night.  The perfect Sangria for Game Days when you are celebrating a good win with friends. Lemon Bar Smash

July 24, 2014

Lemon Bar Smash

:: Lemon Bar Smash ::

Sometimes life gives you lemons, and sometimes those lemons turn into lemon bars that don’t turn out! It’s why I turned this recipe into a Lemon Bar Smash and let’s just say, I am so glad for these lemons.

The pressure was building, the kids were fighting, and we needed to be out the door an hour ago.  It was time for a station visit so that we could see my husband at work.  If you know anything about firefighters, they like to eat! It’s an unspoken rule that when you visit the station, you need to bring a tasty treat.  My goal was to make a semi-homemade batch of lemon bars.  Much to my dismay….the speedy method did not turn out the way I wanted them to.  So in my panic state of mind and in between the he said she said tattle tales by the kids, I remembered everything tastes better topped with ice cream. Red White and Blueberry Cupcakes

June 24, 2014

Red White and Blueberry Cupcakes. A fun festive dessert for the 4th of July.

:: Red, White, and Blueberry Cupcakes ::

It’s officially summer! These Red, White, and Blueberry Cupcakes scream 4th of July! With our easy Whipped Cream Frosting, blueberries, shortbread, and raspberry topping, these patriotic treats are a great way to end your summer barbecues!  It’s crazy to think how quickly this year has flown by.  What is even crazier, is as I blog this post, we aren’t even out of school yet. Tomorrow is the last day of 1st grade for my son, and Wednesday is the last of preschool for Madeline.  I actually think at this moment, I should be doing a post about a celebratory drink that is being enjoyed over a few little tears.  I can’t believe my baby will be in kindergarten next year, and my oldest in second grade.  Though they are almost taller than me, I still think of them as little babies.  Okay, enough about that…..let’s get ready to rock 4th of July next week, with these Red White and Blueberry Cupcakes!
