Strawberry Mango Cream Popsicles

Easy to make Strawberry Mango Cream Popsicles. Tasty on a hot summer day.

Summer is nearly over for us…and the dreading S starts in a few weeks. Yes, Sara and I have been a little MIA from our usual posts for Simply Happenstance. We love our little blog, but both Sara and I have been enjoying our short summer with our kiddos, and lets just say it has simply been going by way toooo fast!

In between beach days and pool time, I blended together this easy and refreshing recipe for Strawberry Mango Cream Popsicles. They are a cinch to make on a hot summer day, but even better enjoyed outside in the nice summer breeze.

Strawberry Mango Cream Popsicles

Ingredients

  • 1 can sweetened condensed milk
  • 1 cup heavy cream
  • 1 cup strawberries
  • 1/4 cup non-fat Greek Yogurt
  • 1 cup frozen mango
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  • Dump all ingredients into a blender and blend until smooth.
  • Pour the mixture into six to eight popsicle molds.
  • Place in the freezer for 4-8 hours.

:: Weekend Lovelies {favorite things} ::

Wow it’s 2014! Can you believe it? Sara and I had a nice break enjoying our family time during the holidays.  With two fire schedules, the holidays aren’t really celebrated exactly as per the calendar date, but around the time we have our husbands home during their days off.  A crazy life for sure, but one we get used to day by day. We were able to capture the moments when we could. 

January is like September for me.  A month to renew, rethink, and re-evaluate what is working in life, and what is not.  I love it because I am not one for big change, so it pushes me outside of my comfort zone to really think about life.  I have a few big resolutions, or I should say “life changes,” that I have been working on for a couple of years. I don’t plan on moving mountains, but the one thing I do love and plan to hang on to, is to the simple idea of “hope.” It’s a big word that can help in multiple ways in life. 

That being said, Sara and I hope you like some new changes we have made to Simply Happenstance!  A big one is our weekly edition of Weekend Lovelies. We thoroughly enjoy lovelies because it truly is an eclectic mix of all the wonderful things we’ve come across on the web. There are so many great recipes, DIY projects, and thought provoking articles to share! In an effort to broaden our lovelies and share more great finds… we thought we’d  open it up to other bloggers! {If you have a personal blog, from this point forward, on Saturday’s & Sunday’s, you’ll be able to link-up your favorite recent blog post to share with our readers! Couldn’t you just get lost on Pinterest for hours, upon hours, this time of year? There are so many amazing craft ideas, gift guides, comforting recipes, and darling fashion finds! Much of this edition of lovelies have come from my time perusing Pinterest this week. Of course, all links are also inspired by the holidays… I hope that you enjoy!

So… we are expecting lots of snow today {yippee}! Like much of the US… it is cold and icy here in the Southern California mountains! We are hoping to stay cozy by the fire, enjoying board games, sipping warm drinks, and doing art projects while my handsome husby is away at work. I’m planning on an easy, yet delicious crock pot roast to fill our home with delicious smells throughout the day! What are you up to this weekend? Hopefully you have some family time planned and are able to take some time for yourself doing something you love!

:: {Weekend} Lovelies ::

It’s a beautiful weekend to enjoy our favorite {weekend} lovelies.  These darling finds are special to us, as like all of our picks. They are recipes we would love to try, places to go, and all-in-all just simply darling finds that we would love to have!  This picture above is the perfect reflection of something we all can do! Just take a little time out for ourselves to enjoy… yoga!  Sara and I love it! We find there is not enough time for it, but need it to just “be” in order to let go. We adore it so much that we have a whole Pinterest Board devoted to it.  It seems like a simple resolution to add into the day, but sometimes it gets put on the back burner {such is life}, but health wise, it can help to make life a bit less stressful.  Our friend, Brooke over at Holy Yoga OC, has found the perfect combination of creating “mommy moments” and spirituality with her yoga classes that create mind, body, and spirit with God’s word.  This is one of our {weekend} lovelies that we hope you’ll check out.  So let’s all sit back, relax, and maybe think about the weeks ahead, and about how we all can find a little time to enjoy a moment or two to take in this fabulous fall season! Oh weekend how we welcome thee!! With the start of school, Sara and I are already wishing we could rewind a bit back to the lazy days of summer.  Who’s with us?  The one thing that has kept us motivated is this beautiful September weather. It’s not cool enough for us to break out jeans and boots, but it is less hot and sticky, making these busy days more enjoyable.  We love viewing the upcoming fall fashion trends and we can’t wait to sport a few!  These have to be my favorite and latest fall find.  Who doesn’t adore a fun leopard pump?
