Strawberry Tropical Cocktail

It was a big birthday week for my family last week during our spring break.  To celebrate I made a few of these Strawberry Tropical Cocktails.  The taste of this tropical drink will take you back to your last vacation, or make you think of taking one real soon.

This Strawberry Tropical Cocktail is definitely on the skinny side so you can enjoy one or two.  Sip them over appetizers in the late afternoon, or share them with a couple of girl friends and count down the days until schools out for summer!

Refreshing and light this Strawberry Tropical Cocktail reminds us of summer.

What makes this drink feel like it should have a tiny umbrella in it is the mixture of coconut vodka with the muddled strawberries and pineapple. I have made this Strawberry Tropical Cocktail by either simply muddling the strawberries and pineapple with Stevia at the bottom of a cocktail glass or I have placed the strawberries and pineapple with Stevia in the blender.  Either pureed or with fruit on the bottom, this recipe is easy to make and it will transport you to a quiet moment beach side with a cocktail in hand.  Cheers to celebrating birthdays, counting down until schools out, and to enjoying these cocktails on a sunny day.

Strawberry Tropical Cocktail

Ingredients

  • 1 1/2 cups sparkling water I used lime flavored
  • 3 ounces of Coconut Vodka
  • 1 ounce Cointreau
  • 1 packet of Stevia
  • 4 strawberries sliced
  • 1/8 cup pineapple fresh or frozen
  • a splash of orange juice

Instructions

  • Divide the strawberries and the pineapple and place in two cocktail glasses.
  • Add half a package of stevia into each of the glasses.
  • Muddle the fruit and Stevia with a back of a spoon.
  • In a cocktail shaker add the Coconut Vodka, Cointreau, and sparkling water.
  • Shake until mixed but be careful to shake too hard as the sparkling water is carbonated.
  • Pour the mixture into the two glasses.
  • Top each glass with a splash of orange juice and serve with ice.
  • Serve and sip cold

Cheers friends to the holidays! This month has been very busy, but we are planning to slow down, take a breather and enjoy a little downtime with this recipe for Orange Marshmallow Mimosas.  I love this time of the year, but with any holiday, you can get wrapped up in the hustle and bustle.  Sara and I have enjoyed you all stopping by, commenting, and liking our little Simply Happenstance.  We are very thankful this year for the support, but we will be taking a little break starting next week to enjoy this holiday season with our family.  I am looking forward to enjoying the good food, the good cheer, the smiling faces, and a couple of these Orange Marshmallow Mimosas on Christmas Day.  We hope you try them too!

Halloween is just around the corner, why not cut the sweets by serving your little ghouls this Spooky Orange Carrot Smoothie! I don’t know about you, but the begging for sweets has already started.  I decided that it’s best not to take my kids to Target in the next coming months.  Believe me, we all love shopping the aisles there, but letting my kids check out the Halloween decor along with the Christmas aisle one row over, and you have them begging and pleading for all of the holiday treats.  I know they will have their fair share of it all, but I am going to try to combat some of their sweets with the serving of this simple and fun Spooky Orange Carrot Smoothie. This Simple Sangria Recipe has a fun story.  In September I will be celebrating my 11th wedding anniversary! My hubby and I got married at a winery.  We both love and enjoy wine. I learned how to make this Simple Sangria Recipe after we had a tasting at the winery in which we wed.  They had a band playing on a warm Sunday afternoon and large vats of Sangria on hand for those customers tasting wine.  It was delicious and it seemed fairly easy to make from what the wine employees had said. {Mind you I wrote down what I thought went in this Sangria on a napkin}.  A little of this and a little of that and a bunch of fruit that sits over night.  The perfect Sangria for Game Days when you are celebrating a good win with friends. Stay calm, stay focused, now repeat, and enjoy.  That is the mantra I am trying to remember during the hustle and bustle.  We are in the thick of it my friends, the lovely holiday season.  We wait for this time all year long and when it comes it seems go by with a blink of an eye.  So here is a small remedy keep it simple, and I am doing so by making Hummingbird Bread.  Sounds fancy but oh so easy.  This year instead of handing out a million cookies, I am making mini breads for my neighbors.  Don’t get me wrong I love baking cookies and will do so, but I want to free up some of my time by creating something that can be enjoyed now and not later when everyone else is stuffed to the brim with sweets.

Oh my I don’t know about you, but I have been in a total downward spiral with food this summer.  This Avocado and Mango Smoothie is the perfect way to help you to get back on track.  These past couple months have been filled with cotton candy, s’mores by the fire, cheese paired nicely with a glass of wine, and a few other summer time sweets…not to mention a whole lot of ice cream.  Wonderful food and memories make summer time a blast, but now it’s time to look ahead to a successful upcoming school year with a little menu planning and a few quick and easy breakfasts that can get the kids out the door and Mama off to a great and energetic start to her day.  This Avocado & Mango Smoothie is creamy, filling, and healthy. It is a cinch to make and with the abundance of local {California} avocados in season and a mixture of bananas, Greek yogurt, orange juice, and a staple of frozen mangoes, packs this meal with protein. All of which I think we lack a little at breakfast time.  I am a firm believer that breakfast makes or breaks your day.  When we are running behind and I don’t plan ahead, I often find myself hungry throughout the day.  This smoothie helped me feel satisfied until lunchtime.  Sara and I have been looking forward to planning a little ahead with some of our favorite easy weeknight meals, a few healthy choices, and of course some sweet fall dessert favorites.  Stay tuned to our upcoming “back to school” recipes.  Enjoy!
