Chocolate Chip Peppermint Cookies

December 17, 2015

These Chocolate Chip Peppermint Cookies are fun and easy way to make a large amount of festive treats. Perfect for cookie exchanges.

Chocolate Chip Peppermint Cookies //

We are just days away from school being out and all of the holiday fun to begin. Like many of you, the last couple weeks leading up to the holiday break are packed full of performances, gift exchanges, and class room parties….not to mention a cookie exchange or two thrown into the mix. For the past few years, I have attended one of my dear friends fun and festive cookie exchanges. Her rules are simple…7-9 dozen of the same cookie. Homemade and in the comments of the Evite, she monitors to make sure we all have a variety of cookies to share. 7-9 dozen cookies you say….crazy right!?, but not so crazy once you have attended one of her parties. Every year she rounds up all of the wrapping (bags, bells, boxes, and tags) so you can create gifts for teachers, neighbors, friends, heck even for the mailman, and sets them out on a large table. Once you do your rounds of picking all of the 7-9 dozen cookies you need, you sit down with a celebratory drink and start wrapping cookies in the prettiest of ways.

It’s a fun way to visit with friends, meet new ones, and find a new favorite cookie or two. This year, like last year, I be bringing these yummy and simple, Chocolate Chip Peppermint Cookies. The recipe calls for a few ingredients, but the kicker is that it makes approximately 112 cookies. The perfect recipe for an exchange as it is only one batch of cookies, and best of all I made mine ahead of time and was able to freeze the dough.

Every year I leave this cookie exchange; happy, festive, and accomplished. Sara and I hope you like this recipe and try it over the next week with your kiddos, as we are sure they will love the sweet combo of peppermint candy and chocolate chips. Let us know what you think?, we hope you bake a batch before company arrives.

Chocolate Chip Peppermint Cookies are an oldie but a goodie. They make almost 9 dozen in one batch.

Protein Packed Energy Bites

Protein Packed (No-Bake) Energy BallsProtein Packed Energy Bites //

There are few things I enjoy more than whipping up something delicious for my four little ones. I love knowing the ingredients that go into the foods that nourish their bodies. I also love the sweet smiles on their cute little faces when they bite into homemade treats!

Protein Packed (No-Bake) Energy Balls

This recipe is a simple one that the kids can even help with. With only a handful of healthful ingredients — this snack can be made in minutes. Their little hands are perfect for rolling the (no-bake) mixture into bite-sized balls.

I must admit, once you take your first bite, you may feel a little guilty! It’s sort of like eating a ball of cookie dough… only this time, you don’t have to sneak it!

Oatmeal, flaxseed, chia seeds, natural peanut butter, unsweetened coconut, raw honey, and chocolate chips make up the ingredients. The kids will have no idea that you are really filling up their bellies with protein-packed energy food!

These energy bites are great served as part of breakfast, packed in school lunches, eaten as an afternoon snack, prepared for upcoming road trips, for a fun day hiking, or an outing to the beach. (In fact, these little goodies will be accompanying my little girl on her field trip today!)

There are so many ways that you can customize these energy balls to make them your own! Try adding nuts, pretzels pieces, dried fruit, white chocolate, peanut butter chips, and/or endless other ingredients! (Just make sure to add enough nut butter and honey to bind it all together.) Enjoy!

Ingredients

  • 1 cup dry oatmeal
  • 2/3 cup unsweetened coconut flakes
  • 1/2 cup peanut butter or other nut butter
  • 1/2 cup ground flax seed
  • 1/2 cup mini chocolate chips

Let’s talk about these chocolate bars! I’ve been trying to cut back on processed sugars over the past year {ok… several years!} It’s not always easy, since I’m the busy mama of four, have a crazy love of baking, and have a total sweet tooth! These days, I try to sweeten the treats I make using raw honey, when I can. I feel so great when I’m able to offer my kids a wholesome, homemade treat using fine, simple ingredients. These Chocolate Almond Oat Bars are just that.

Skillet Spiced Apple Crumble

Get ready for Fall with this Skillet Spiced Apple Crumble:: Skillet Spiced Apple Crumble ::

We love fall!  As soon as the temperature drops a couple degrees, I make this light and simple Skillet Spiced Apple Crumble.

Over the weekend my husband and I celebrated our 11th wedding anniversary.  We spent the day going back to the town and winery that we got married at.  It was a beautiful day out in Temecula.  The weather was cooler and there was a slight breeze, a relief from the heat that we have had here in Southern California.  I know that most people don’t think that we have much of a fall, but we do have a few slight changes when this season arrives. I took full advantage of this fall feeling and I made this special Skillet Spiced Apple Crumble for my hubby.  It’s one of his favorite desserts. It was our anniversary after all {wink}! chewy monster cookies:: Chewy Monster Cookies ::

Did you ever daydream, as a kid, about the kind of parent you wanted to be? Clearly my thoughts weren’t too deep, as I remember wanting to be the type of mom that had fresh baked cookies waiting on the table for my kids when they arrived home from school. Ha! Since I have been blessed with four little ones, I try to make that happen on occasion. After all, what is better than walking into a home filled with smells of warm, chocolatey cookies?!
