Fruits and vegetables are a struggle in my household.  I have a picky eater on my hands, and a little girl who eats enough fruit for the two of them.  Vegetables seem to be the bigger battle of the two, so why not throw in a couple into a smoothie?

Almond Poppy Seed Muffins

:: ALMOND POPPY SEED MUFFINS ::

Isn’t it funny how certain sights, sounds, tastes, and smells evoke emotions and bring back memories? Well… the smell and taste of these muffins do just that for me. It brings me back to my early high school years spent in San Diego…. Happy memories surfaced of the carefree days spent with one of my best high school friends. We used to make these muffins after school or on the weekends. Back then, we made them from a boxed mix… and they really were delicious! I think we’d practically devour the whole dozen! I haven’t seen them since those years, long ago. I have found lemon poppyseed muffin mix… but that just isn’t the same in my opinion! There is just something magical about the combination of almonds with poppy seeds!

Old-Fashioned Banana Pudding

:: Old-Fashioned Banana Pudding :: 

It really is simple. Use only the finest ingredients, pour some love into what you cook…. and the result is a rich, smooth, creamy dessert that will make your taste buds dance with delight!

You can adjust the sweetness of this particular dish by the amount of sugar that you add. It’s all a matter of personal preference. After allowing the pudding to chill in the fridge, dish it up and top with perfectly ripe banana slices & crunchy vanilla wafer cookies. The subtle hint of fresh banana combined with the tiny flecks of natural vanilla bean in the pudding makes this an old-fashioned dish you’ll remember!

Vegetarian Lasgana

 :: VEGETARIAN LASAGNA ::  

“Meatless Monday” anyone? I’m not sure about you…. but I’m always looking for a new vegetarian option that’s family friendly. I was attracted to this recipe from Trisha Yearwood because the use of cashews, tofu and fresh basil to create a ricotta-like mixture sounded delicious… and unique! The recipe also called for black beans in place of a meat mixture. Yum!

Of course, like with any recipe, I made some changes after reading the reviews. It turned out super tasty, and also made for great leftovers {which I’m not usually a fan of}! After the recipe {shown below} I listed a few pointers, as well as, additional ingredients you might like to incorporate to make this lasagna recipe tailored to fit your family!

Egg-in-a-Hole

My kids and I have a secret obsession….. it’s watching the Food Network’s cooking shows! We don’t turn the television on during the week {because we’ve learned we never get homework done otherwise}, but when the weekend strikes… the kids and I do love a little downtime watching a few of our favorites together…. especially the Pioneer Woman, the Barefoot Contessa, and Trisha’s Southern Kitchen {or Ree, Ina & Trisha… as we call them around here}! This recipe is one that I recently tried out from Ree {the Pioneer Woman}. I decided to be a loving wife and make Husby a little breakfast upon coming home from a 48-hour shift at the fire station. I am actually allergic to eggs… so I was not able to sample the dish, but I will say that it smelled heavenly… and Husby did devour two pieces and said he thinks it’s even better than FRENCH TOAST!!

Chicken Pot Pie Recipe

Who doesn’t like Chicken Pot Pie?

This recipe is easy and is one of the most requested by my husband.

I would classify it as a semi-homemade but it tastes as though you 

have worked on this meal for hours.

I actually must give my Mom credit for this meal.

With 5 girls to feed, my Mom thrived on making meals that had a few shortcuts.

I think it helped with shortening her time in the kitchen, as well as allowing

us girls to help her cook dinner.

It was the perfect learning experience and introduction to cooking as a kid.

This pie can be changed to your liking with the addition of different veggies and/or meat.

The Chicken Pot Pie Recipe that I have detailed below, is the quickest version of this meal.

Using a rotisserie chicken, Pillsbury Pie Crusts {my absolute favorite pie crusts},

and frozen vegetables allows for this hearty meal to be made in half the time!

Perfect for that busy weeknight meal or when you have some unexpected guests!
