Peanut Butter Malted Crunch Ice Cream

:: Peanut Butter Malted Crunch Ice Cream ::

Okay, so I am dealing with a slight addiction to ice boxed treats! I blame it on the heat, and the kids love of ice cream! Peanut Butter Malted Crunch Ice Cream has to be my most favorite ice cream recipe that I have made {as of late}.  Yes… I did say that about my Strawberry Ice Cream {but that was last weeks favorite flavor, wink}. This recipe is a creation based on my husband’s uncanny addiction to malted milk.  He always has to have a malt, not a shake, whenever we are at Ruby’s.  It inspired me to combine this with my love of peanut butter and white chocolate.  I apologize ahead of time! This ice cream recipe is addicting! I pray that I make it through the summer without gaining 10 pounds from this and any upcoming ice cream recipes. Making ice cream is easy and sharing is caring… so let’s make up a batch to beat this summer heat!

Peanut Butter Malted Crunch Ice Cream

Ingredients
  1. 1 cup of 2% milk
  2. 3/4 cup sugar
  3. 1 teaspoon of vanilla
  4. 2 cups heavy whipping cream
  5. 2/3 cup malted milk powder (Carnation Malted Milk Powder)
  6. 1/3 cup creamy natural peanut butter (Skippy)
  7. 1/4 cup white chocolate chips (Ghirardelli)
Instructions
  1. In a small bowl whisk together milk, malted milk, vanilla, and sugar.
  2. Mix this until sugar is dissolved and the milk is frothy.
  3. Attach your freezer bowl to your ice cream machine, add the paddle, and pour the mixture from the small bowl into the freezer bowl.
  4. Place the top of the ice cream machine over the freezer bowl and turn on.
  5. While on, pour in the two cups of heavy whipping cream.
  6. After 15 minutes, turn off and add the peanut and mix for an additional 8 minutes.
  7. With the last 2 minutes remaining, add the white chocolate chips and finish mixing.
  8. Turn off the ice cream machine and spoon the ice cream mixture into a freezer safe container.
  9. Let the ice cream sit for a minimum of 2 hours.
Notes
  1. This rich ice cream is for sure a treat. Perfect for summertime guests! Enjoy!
