Believe it or not… I actually went about two years without eating pizza {Gasp! I know!}. During my first pregnancy, I didn’t experience food cravings as much as I experienced food aversions. Unfortunately, pizza… was the enemy. I couldn’t handle the taste, smell, or even the word P-I-Z-Z-A. Thankfully with time, the aversion passed {I think Husby was especially grateful for that}! Now… like most of you, I completely savor a good slice of pizza… especially if it’s homemade. Typically my husby picks up some of Trader Joe’s premade pizza dough, on his stop at the market before making his way up the mountain to our home. However, this week, he was home from the fire station for a few days and we didn’t have any dough on hand. I decided to mix up an easy homemade pizza dough {from one of my faves… The Pioneer Woman}, and top it with fresh, organic veggies from my mom’s garden. Yum!

The best part about making homemade pizza dough, is that there are literally only a few key ingredients needed…. flour, salt, olive oil, water and yeast. It honestly took me less than 5 minutes to make, and only an hour to let rise.

Looking for a healthy, easy weeknight meal? Look no further! This has been a family favorite for many years! One of my dear friends gave me this recipe when my oldest son was a toddler. We’ve been eating it ever since! This isn’t your traditional meatloaf. It’s healthier with the use of ground turkey instead of ground beef.  A layer of fresh spinach topped with shredded mozzarella {optional} is rolled up inside, keeping this dish flavorful and moist! This is one of those great meals that you can prepare earlier in the day and throw into the fridge until you are ready to cook. Welcome, Back to School!  That being said, things are about to get crazy around here… time to pull out the crock pot and make a little plan ahead Crock Pot Spaghetti for dinner.  Whew! With the kids in soccer, school, and therapy we have a busy Fall season.  Meal planning is something Sara and I are really trying to add into our weekly schedules.  It helps to run a smooth household, as well as, fewer trips to the grocery store.  This Crock Pot Spaghetti Recipe is one that I created based on my favorites… pasta, chicken sausage, and turkey meat.  These little gems from my neighbor’s backyard, inspired me to think of a sauce that, though canned {tomatoes}, can be full of flavor over a slow cooking process. {weekend} lovelies

 :: Weekend Lovelies ::

It’s so funny how only a couple of months ago, Nicole and I were both enthusiastically awaiting warm, carefree summer days… and now our minds have completely made the switch to Autumn. We are currently daydreaming of crisp weather, fallen leaves, cinnamon, cozy sweaters, apple cider, full moons, pumpkin carvings, boots, warm crackling fires, cuddling close, autumn colors, scarecrows, salted caramel hot chocolates, wool blankets, football season, baked treats, thankfulness, visits with friends & family, hay rides, snug scarves, candy corn, costumes, pumpkin spice lattes, harvest festivals, weekend naps, movie nights, caramel apples, corn mazes & good books! Oh Fall… how we love thee!

It’s still scorching hot in Southern Califonia… but we can dream! With this edition of Lovelies we are welcoming Fall with open arms and happy, eager hearts! Enjoy & let us know what you are most excited for in the coming season! {xo}

Panzanella Salad

It just doesn’t get much easier {or tastier}, than this healthy summer salad! Panzanella Salad is my absolute FAVORITE dish to serve to friends… whether I’m taking it to their house, or hosting a summer playdate in my own home. It’s also the perfect meal to bring for a picnic lunch or concert in the park! 

There is some chopping of fresh veggies involved, the making of a simple homemade vinaigrette dressing, and a little toasting of french bread in a frying pan with a drizzle of olive oil… but the steps are super basic {you could even get the kids to help you toss it all together}! In under thirty minutes… you will have a scrumptious, fresh, tangy, and crisp bread salad to enjoy!

This recipe has always gotten rave reviews… but the best part is that you can easily customize it to your own taste! For example… love a greek salad? Just add in some chopped olives and feta cheese! For my husby, I omitted the red onion and added avocado slices. Any way that you do it… it comes out perfectly fresh and delectable! The combination of flavors is seriously… mouthwatering! Vegetarian Lasgana

 :: VEGETARIAN LASAGNA ::  

“Meatless Monday” anyone? I’m not sure about you…. but I’m always looking for a new vegetarian option that’s family friendly. I was attracted to this recipe from Trisha Yearwood because the use of cashews, tofu and fresh basil to create a ricotta-like mixture sounded delicious… and unique! The recipe also called for black beans in place of a meat mixture. Yum!

Of course, like with any recipe, I made some changes after reading the reviews. It turned out super tasty, and also made for great leftovers {which I’m not usually a fan of}! After the recipe {shown below} I listed a few pointers, as well as, additional ingredients you might like to incorporate to make this lasagna recipe tailored to fit your family!
