Red White and Blueberry Cupcakes. A fun festive dessert for the 4th of July.

It’s officially summer! These Red, White, and Blueberry Cupcakes scream 4th of July! With our easy Whipped Cream Frosting, blueberries, shortbread, and raspberry topping, these patriotic treats are a great way to end your summer barbecues!  It’s crazy to think how quickly this year has flown by.  What is even crazier, is as I blog this post, we aren’t even out of school yet. Tomorrow is the last day of 1st grade for my son, and Wednesday is the last of preschool for Madeline.  I actually think at this moment, I should be doing a post about a celebratory drink that is being enjoyed over a few little tears.  I can’t believe my baby will be in kindergarten next year, and my oldest in second grade.  Though they are almost taller than me, I still think of them as little babies.  Okay, enough about that…..let’s get ready to rock 4th of July next week, with these Red White and Blueberry Cupcakes! :: Maple Cream Cheese Whipped Frosting ::

Confession…. this post was totally supposed to be about Pumpkin Spice Cupcakes with Maple Cream Cheese Whipped Frosting {whew… that’s a mouthful}, but…. the frosting literally STOLE the show! I decided that this entire post had to be dedicated to its light, airy, sweetness!

So, a little background… I first had this whipped cream cheese frosting when one of my lovely friends/coworkers made me cupcakes for my surprise baby shower with Mr. Amazing. Thankfully, my dear friend gave me the recipe, which I then passed on to Nicole, and some of my other close friends. In fact, Nicole also loves it, and has shared the recipe with you here. This time around… I made a minor {dare I say…. remarkable} adjustment, which turned this perfect summer frosting into the perfect one for fall. In fact… I couldn’t sleep last night because I was thinking of all the ways one could eat this heavenly confection!

Here are my thoughts… this would be incredibly delicious topped on pancakes, waffles, spice cakes, pumpkin, apple, or pecan pies, graham crackers, sugar cookies, or even fall muffins! It could be used as a sweet filling for dessert crepes… or you could simply dunk sliced apples right into it! Of course, there’s always my favorite option… eat. it. straight. out. of. the. bowl. {weekend} lovelies

 :: Weekend Lovelies ::

It’s so funny how only a couple of months ago, Nicole and I were both enthusiastically awaiting warm, carefree summer days… and now our minds have completely made the switch to Autumn. We are currently daydreaming of crisp weather, fallen leaves, cinnamon, cozy sweaters, apple cider, full moons, pumpkin carvings, boots, warm crackling fires, cuddling close, autumn colors, scarecrows, salted caramel hot chocolates, wool blankets, football season, baked treats, thankfulness, visits with friends & family, hay rides, snug scarves, candy corn, costumes, pumpkin spice lattes, harvest festivals, weekend naps, movie nights, caramel apples, corn mazes & good books! Oh Fall… how we love thee!

It’s still scorching hot in Southern Califonia… but we can dream! With this edition of Lovelies we are welcoming Fall with open arms and happy, eager hearts! Enjoy & let us know what you are most excited for in the coming season! {xo}

Whipped Cream Frosting Cupcakes

It has been a busy week of celebrations.

We just finished having a very Happy Halloween.  A week to the day is my son’s birthday.

Then it follows with my godson and sisters’ plus topping it off with Thanksgiving.

Whoa….. quite a bit, but as a mom you know it never ends just there.

So I have to be on my game with quick ideas and easy semi home made versions of great recipes.

Last week I spent an hour late at night melting chocolate over a double boiler plus making

homemade cupcakes from my favorite Magnolia Bakery recipe.

A bit of work, but well worth it for my son’s 6th birthday request and I feel great doing it.

The recipe I know very well and it is a go to one at that, but it is time consuming as baking

is a science and one must pay attention to all of the ingredients and steps.

Though I love baking this way, it is not practical when you have a busy activity week.

So when it is my turn to volunteer for cupcakes.  I prefer to make a semi home made version

of some of my favorite recipes, I use boxed mix for the cake portion.

Magnolia Bakery’s Vanilla Butter cream is a favorite. 

I love everything about it, not too sweet and not too much but I now have a runner up.

Last year at Sara’s daughter’s birthday I experienced her Whipped Cream Frosting.

It is amazing.  So much so I can eat a whole bowl of it.

I make it and think what can I dip this in add this to or frankly just smother this on!

Love love it! This is a keeper.  Thanks Sara for sharing!

{I don’t know if my thighs are thinking the same thing}

*Whipped Cream Frosting*

Ingredients

1 (8 ounce) package cream cheese

1 cup white sugar

1/8 teaspoon salt

1 teaspoon vanilla extract

1 1/2 cups heavy whipping cream

 Directions

In a small bowl beat whipping cream until stiff peaks form; set aside.

In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until smooth, then fold in whipped cream.
