Beet Caprese SaladBeet Caprese Salad //

Oh, don’t you just love that summer is approaching rather quickly? Even though we are only in the midst of this spring season, I am eagerly awaiting pretty summer days… filled with lazy pajama mornings, no frantic schedule, loads of time with the kids, endless amounts of sunshine, and light tasty dishes enjoyed alfresco! How about you?

Beet Caprese Salad Recipe via Simply Happenstance #capresesalad #beets

This light Beet Caprese Salad is the perfect dish to accompany a warm day! I’ve had variations of it recently, while dining out. I decided to start lunching on this homemade salad during our Spring Break, since I had a little more time to focus on healthy meals. The combination of fresh vegetables, flavorful basil, creamy burrata cheese, crunchy pine nuts and slightly tangy balsamic dressing is brilliant! Your tastebuds will surely do a happy dance!

Beet Caprese Salad with a Balsamic Dressing (recipe on Simply Happenstance)

The preparation takes mere minutes if you start with pre-cooked beets (that would be my recommendation to you). I bought them in the refrigerator section at Trader Joe’s. The rest of the ingredients you can slice and layer into a bowl or platter to serve. You can omit the spinach leaves altogether, and serve this deliciousness as an appetizer (by itself), or as a topping on warm grilled bread to make bruschetta.

Regardless of how you decide to serve/eat it… you will be delighted! The freshness of the ingredients and robustness of flavor really shines through!

Instructions

  • DRESSING //
  • Add the olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper together in a glass jar with a lid. Replace lid on the jar and shake vigorously until thoroughly combined OR mix in a small bowl using a fork to combine. Set aside or refrigerate until ready to use.

Notes

* You can omit the spinach leaves and serve as an appetizer using the remaining ingredients. Eat this tasty beet caprese salad on its own, or serve with warm grilled bread (to make bruschetta).

 Enjoy, friends! The warm days of summer are drawing near!

Lemon Asparagus Prosciutto Pasta

Lemon Asparagus Prosciutto Pasta

:: Lemon Asparagus Prosciutto Pasta ::

{gluten-free}

Hello, everyone! I feel like it’s been ages since I last posted! I took last week off from blogging to thoroughly enjoy my Maui vacation with my handsome man! Our trip was AMAZING! Truly… just what we needed! {I will share some photos and highlights of our trip soon!}

So… on to this delectable dish! I have been making this tasty pasta for the past few years {adapted from the fabulous Giada De Laurentiis on the Food Network}. The original recipe was completely delicious… however, I added the juice of a fresh lemon, and grated parmesan to jazz things up a bit! Since I’m not currently eating wheat… I also made it gluten-free by using quinoa pasta! It was so good… and a great alternative to using rice pasta {also a gluten-free choice}.

Lemon Asparagus Prosciutto Pasta

I love how fresh this pasta dish is! It uses only the finest, simple ingredients… asparagus, basil, prosciutto, garlic, creamy smoked mozzarella, grated parmesan, and tangy lemon. {Yum! Such a lovely Spring or Summer dish!} [Read more…]

Walnut Pesto

October 30, 2013

Walnut Pesto

 :: Walnut Pesto ::

Do you find when it comes to dinnertime that you often have a hard time figuring out what to make?  This Walnut Pesto can create several easy weeknight meals.  I love a rich basil pesto as much as the next girl, but what makes this pesto a little different is the use of walnuts.  Yes, walnuts! They create as much flavor as pine nuts and are half the price. These rich and buttery nuts make this pesto a bit more diverse in both flavor and texture. What is wonderful about these special nuts, is the fact that they are native to California, and we love that!  The local nut mixed with local ingredients from my garden box, made two easy weeknight meals for my family.  [Read more…]

Chicken Pesto Pasta

August 8, 2013

:: Chicken Pesto Pasta ::

Oh Chicken Pesto Pasta… how I love thee.  I have a pasta addiction.  If you were to ask me what my favorite meal would include, it would have to be some sort of pasta.  I know I have a little Italian buried somewhere in my lineage {wink}. Though it is summer and some of you can’t think of eating a heavy meal, this light yet savory sauce makes this pasta not as weighing as a traditional lasagna.  This pasta was created from a combination of herbs and tomatoes from my garden box, basil pesto sauce, and burrata cheese.  Giada’s first book, Every Day Italian, has a ton of hidden gems and basic sauces that can be built into entirely creative pasta meals.  Easy, simple, and delicious.  It is one of my favorite Italian cookbooks.  As for the garden boxes…  in this sunny yet mild California climate for summer, my basil and sun burst yellow tomatoes have taken off like crazy! So why not combine the two with chunks of creamy burrata cheese? [Read more…]

Panzanella Salad

June 26, 2013

:: Panzanella Salad ::

It just doesn’t get much easier {or tastier}, than this healthy summer salad! Panzanella Salad is my absolute FAVORITE dish to serve to friends… whether I’m taking it to their house, or hosting a summer playdate in my own home. It’s also the perfect meal to bring for a picnic lunch or concert in the park!

There is some chopping of fresh veggies involved, the making of a simple homemade vinaigrette dressing, and a little toasting of french bread in a frying pan with a drizzle of olive oil… but the steps are super basic {you could even get the kids to help you toss it all together}! In under thirty minutes… you will have a scrumptious, fresh, tangy, and crisp bread salad to enjoy!

This recipe has always gotten rave reviews… but the best part is that you can easily customize it to your own taste! For example… love a greek salad? Just add in some chopped olives and feta cheese! For my husby, I omitted the red onion and added avocado slices. Any way that you do it… it comes out perfectly fresh and delectable! The combination of flavors is seriously… mouthwatering!
