This salad is exactly that!

I almost hate to call it a salad…

because it is so much more with the added heartiness of cheese tortellini thrown in the mix.

It’s fresh, filling, and nutty with a hint of sweetness!

You have some options here, depending on your personal taste preferences:

… Kale or Spinach …

… Fresh Strawberries or Apples Slices …

… White or Whole Wheat Tortellini …

… Feta, Bleu, or Gorgonzola Cheese …

… Walnuts or Pecans …

Strawberry, Kale & Tortellini Salad

The tortellini in this salad gives it an added heartiness! You have some options here to personalize according to your preferences. It's the perfect Spring or Summertime dish paired with crusty bread!

Ingredients

  • 1 bunch of kale or raw spinach leaves
  • 1 package of fresh or frozen cheese-filled tortellini
  • 1 container of fresh strawberries or 2 apples {chopped}
  • 1/2 cup crumbled feta bleu, or gorgonzola cheese
  • 1 sliced avocado {optional}
  • 1/2 cup of chopped walnuts or pecans {optional}
  • Balsamic or Poppyseed Dressing of choice

Instructions

  • Cook tortellini according to package instructions, drain, & set aside. Rinse & chop kale, & strawberries. Slice avocado. Combine all ingredients and sprinkle with feta & pecans. Drizzle with your dressing of choice!
