Oh, how a long school day can take the fun out of things! Okay I am only kidding, but it does take up the majority of our day, so why not make it a little fun with some Strawberry Banana Chip Muffins as a mid-day snack.  Yes, I know… muffins are just as wonderful paired with a cup of Joe, but these little mid-day treats make the day much more enjoyable!

Let me count the reasons why I love these muffins:

  1. They are made with ruby red strawberries.  Don’t they remind you of spring?
  2. This is actually a light recipe, so yes Mommy can have one…or two?
  3. Two {hidden} ripe bananas.
  4. Of course the piece of resistance….chocolate chips, yum!

Yes I said {hidden} bananas above.  When life gives me a chance to add in a fruit or two, I take it!  If I have some chocolate chips mixed into the batter, my picky eater doesn’t notice the yummy chunks of fruit that make these muffins sensational. A little fruit, a little chocolate, and oh remember, I mentioned these are light….why yes they are.  They are made with applesauce and a little brown sugar.  So do give yourself a break today.  I know I rewarded myself with a muffin afternoon pick me up.

Oh I can’t forget my little helper, who had decided to take a few shots of her own…waiting patiently for the muffins to be ready.  Did I mention her favorite fruit are strawberries?

Strawberry Banana Chocolate Chip Muffins

Strawberry Banana Chip Muffins

Ingredients

  • 2 ripe bananas
  • 2 cups strawberries/sliced I used Driscoll's
  • 1/3 cup chunky applesauce
  • 1/3 cup brown sugar
  • 1 1/4 cup flour I use half white and half whole wheat
  • 1/4 cup dark or milk chocolate chips
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon agave syrup
  • 1/2 teaspoon vanilla
  • 2 egg whites
  • Cooking spray

Instructions

  • Preheat the oven to 325 degrees F.
  • Lightly spray and line 2 muffin pans.
  • These make approximately 18 muffins.
  • Wash and slice strawberries into quarters.
  • Set strawberries in a bowl.
  • Add the agave syrup and mix.
  • Set the strawberries in the fridge for 1 hour.
  • Once the strawberries have mixed with the agave syrup, remove from the fridge.
  • In a mixing bowl, add the flour, salt, and baking soda.
  • Sift these dry ingredients or mix with a whisk and set aside.
  • In the bowl of a mixer, add the egg whites.
  • Mix until light.
  • Add the butter and the brown sugar, then mix for 2 minutes until light brown.
  • Then brake up the bananas and add to the bowl along with the applesauce and vanilla.
  • Turn the mixer on and mix for 2 minutes until the bananas are broken down.
  • Add the strawberries and their juice to the bowl.
  • Mix for 1 minute.
  • Next add the flour mixture in one cup increments, turning on the mixer and mixing for 30 seconds.
  • Once the batter is fully mixed, mix in the chocolate chips by hand.
  • Scoop a large spoonful of batter into the lined muffin pan, filling 3/4 of the way up each muffin holder.
  • Bake for 20-25 minutes until cooked through the middle.
  • Let cool for 10 minutes and then enjoy!
