Coconut Margarita

Coconut Margarita. Easy to make and it screams vacation!:: Coconut Margarita ::

You put the lime in the coconut and drink this Coconut Margarita all up! Oh my! Though we did a family vacation last month, I am simply dreaming of escaping to a tropical island for a week with my husband.  Sorry, but no kids and lots of Coconut Margaritas! {Love the kids but it’s been a long 9 days.} An ocean breeze, palm trees, and quiet….lots of quiet is what I think these margaritas would go perfect with.  But since that’s not happening anytime soon, I will happily drink a Coconut Margarita and pretend!

My hubby has been away working at the fires in Northern California. Of course the kids are sick, and we have been stuck inside.  So instead of wallowing in my piles of laundry, I decided it’s time to pretend… tropical vacation here I come!

Limes for coconut margaritas

Sometimes in life you just have to treat yourself.  These are one of the treats I highly recommend.  This Coconut Margarita can be turned into adult popsicles or better yet, Smitten Kitchen has an amazing Frozen Coconut Limeade drink {that I adapted this recipe from} that is wonderful as a non-alcoholic summer beverage.

These coconut margaritas can be turned into adult popsicles.

However you decide to enjoy this Coconut Margarita, I highly recommend enjoying a batch of these while we can still soak in summertime.

Coconut Margarita

Prep time:  10 mins

Cook time:  3 mins

Total time:  13 mins

Serves: 4

Ingredients
  • 2½-3 cups of crushed ice
  • 1½ cups Coconut Milk {I used Trader Joe's or you can use a low-fat version too.}
  • 4 tablespoons Zulka pure cane sugar or 2 packets of Stevia
  • 4 limes juiced
  • 8 ounces of Silver Tequila
  • 4 ounces of Cointreu
Instructions
  1. Dump the crushed ice in the base of a blender.
  2. Add the coconut milk, sugar, the juice of 4 limes, silver tequila, and Cointreau.
  3. Turn the blender on and blend until smooth.
  4. Pour and enjoy.
Notes
You can enjoy this as a drink or pour into popsicle molds and freeze over night. Adapted by Smitten Kitchen.
