Peanut Butter Banana Ice Cream Sandwiches
These semi-homemade Peanut Butter Banana Ice Cream Sandwiches are the most decadent summer treat!

- 1 pound {refrigerated ready to bake} chocolate chip cookie dough {I used Pillsbury}
- 1/2-3/4 cup creamy peanut butter
- 2 medium-sized bananas
- 1 carton of vanilla ice cream softened {I used Breyers}
Bake 12 {equally-sized} cookies, according to package instructions. Set aside to cool.
When cookies are cool, spread peanut butter on the bottom of 6 cookies.
Top with a few slices of fresh banana.
Using an ice cream scoop, dish about 1/3 cup softened ice cream on top of the banana slices.Place a chocolate chip cookie on top ,and gently press to form a sandwich. Repeat with the remaining ice cream and cookies.
Serve immediately, or wrap in plastic wrap and store in the freezer.
If frozen, allow cookies to sit out for a few minutes on the counter {so the cookies won't be too hard to bite}.
